Ingredients

The dough

  • 2 tablespoons active dry yeast
  • 2 cups warm water
  • 1 tablespoon white sugar
  • 5-6 cups all-purpose flour
  • ¼ cup butter, melted
  • 2 teaspoons kosher salt
  • 2-3 tablespoons extra-virgin olive oil

The topping

  • 1 cup shredded Asiago cheese

Instructions

  1. Combine warm water, sugar, and yeast in a bowl and let it stand until frothy.
  2. In a stand mixer, mix flour and salt, then add melted butter and the yeast mixture to form a sticky dough.
  3. Gradually add remaining flour until a smooth dough forms, then knead for 5 minutes.
  4. Cover the dough and let it rise for 1 hour.
  5. Prepare a pan with non-stick spray, then punch down the dough and press it into the pan.
  6. Cover and let it rise for another 45 minutes.
  7. Preheat the oven to 375°F.
  8. Brush the dough with olive oil, create dimples with your fingers, and sprinkle with Asiago cheese.
  9. Bake for 25-30 minutes until golden brown, covering with foil if the cheese browns too quickly.
  10. Cut into squares for sandwiches or serve as is.
