Ingredients

Focaccia

  • ¾ cup warm water
  • 2 teaspoons instant or quick-rising yeast
  • 1 teaspoon agave syrup or pure maple syrup
  • ½ cup plant-based milk, plain, unsweetened
  • 1 cup whole wheat flour
  • ¾ cup all purpose flour
  • 1 tablespoon ground flax seeds
  • ½ teaspoon salt (optional)
  • 3 tablespoons extra virgin olive oil

Herb Vegetable Focaccia Toppings

  • as desired fresh herbs, chopped
  • as desired freshly ground black pepper
  • as desired Italian seasoning blend
  • as desired course sea salt
  • as desired tomatoes, sliced
  • as desired zucchini, sliced
  • as desired eggplant, sliced
  • as desired olives
  • as desired pine nuts
  • as desired vegan Parmesan cheese

Instructions

  1. Combine warm water, yeast, and agave syrup in a bowl and let it rest for 5 minutes.
  2. Add plant-based milk, whole wheat flour, all-purpose flour, flax seeds, and salt, and mix until the dough pulls away from the bowl.
  3. Knead the dough on a floured surface for about one minute until soft and moist.
  4. Grease a bowl with olive oil, place the dough inside, cover, and let it rise in a warm place for 1 hour.
  5. Punch down the dough and divide it into six equal pieces, shaping them into disks on oiled baking sheets.
  6. Cover and let rise for another 20 minutes.
  7. Preheat the oven to 400°F.
  8. Dimple the surface of each disk, drizzle with olive oil, and add desired toppings.
  9. Bake for 10-15 minutes until lightly browned and tender.
  10. Serve immediately, or refrigerate leftovers.
