Instructions
- Cook the potatoes and eggs ahead of time to allow for complete cooling.
- Mix all the vinaigrette ingredients in a bowl and whisk until emulsified.
- In a large bowl, combine all salad ingredients except for the eggs and pecans, and add the vinaigrette.
- Transfer the salad to serving plates, place the eggs on top, and sprinkle with toasted pecans.
