Instructions
- Hard boil the eggs, then cool and cut them into wedges.
- Blanch the green beans until bright green and crisp-tender, then cool in an ice bath.
- Whisk together the dressing ingredients until combined.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and green beans; toss with dressing.
- Top the salad with white beans, olives, and arrange the eggs around the sides. Drizzle with remaining vinaigrette and sprinkle with parsley and pepper.
