Vegetarian Niçoise Salad

Ingredients

The salad

  • 3 large eggs
  • 6 ounces green beans
  • 4 ounces mixed greens
  • 6 ounces cherry tomatoes
  • 1 small cucumber
  • cup small black olives
  • 7 ounces white beans
  • 3 tablespoons fresh parsley
  • to taste black pepper

The vinaigrette

  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • ½ shallot minced
  • teaspoon kosher salt
  • ¼ cup olive oil

Instructions

  1. Hard boil the eggs, then cool and cut them into wedges.
  2. Blanch the green beans until bright green and crisp-tender, then cool in an ice bath.
  3. Whisk together the dressing ingredients until combined.
  4. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and green beans; toss with dressing.
  5. Top the salad with white beans, olives, and arrange the eggs around the sides. Drizzle with remaining vinaigrette and sprinkle with parsley and pepper.
