Mom's Spaghetti and Meat Sauce

Ingredients

The meat sauce

  • 1 pound 85% lean ground beef
  • 1 yellow onion chopped
  • 4 stalks celery, chopped
  • 4 cloves garlic, minced or pressed
  • 1 29-ounce can diced tomatoes
  • 1 29-ounce can tomato sauce
  • 1 6-ounce can tomato paste
  • 2 7-ounce cans sliced mushrooms
  • 1 cup red wine
  • 1 15-ounce can beef broth
  • 4-6 whole cloves cloves
  • 2 leaves bay leaves
  • 2 tablespoons sugar
  • ΒΌ cup chopped fresh parsley or 4 teaspoons dried
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

The pasta

  • 1 pound dried spaghetti noodles
  • to taste grated Parmesan cheese

Instructions

  1. Brown the ground beef in a large pot over medium-high heat for about 5-7 minutes, then drain the fat.
  2. Add the chopped onion, celery, and garlic to the pot and cook until softened, about 5-7 minutes.
  3. Stir in the remaining ingredients for the sauce, bring to a boil, then reduce to a simmer and cover.
  4. Cook the sauce on medium-low heat for at least three hours, stirring occasionally.
  5. Cook the spaghetti according to package directions in salted water, then drain.
  6. Mix the cooked spaghetti into the sauce and serve with grated Parmesan cheese.
