Shredded Jackfruit Veg Carnitas

Instructions
- Drain, rinse, and slice the jackfruit into thin strips.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped onion and sauté until softened.
- Stir in the garlic, smoked paprika, and taco seasoning.
- Add the water, lemon juice, salt, and jackfruit to the skillet.
- Cover and simmer for 5 to 10 minutes until most of the liquid is absorbed.
- Use a wooden spoon to smash the jackfruit to achieve a shredded texture.
