Crispy Jackfruit Carnitas

Ingredients

The jackfruit mixture

  • 20 ounce can Jackfruit (packed in water, not syrup)
  • ½ red onion diced
  • 4 cloves garlic
  • ½ jalapeno finely diced
  • ½ teaspoon salt
  • 1 tablespoon soy sauce or Braggs liquid amino acid

The spices

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dry Mexican oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon sugar

The cooking ingredients

  • 2 tablespoon olive oil

Instructions

  1. Drain the jackfruit and cut it into very thin slices.
  2. Wring out the jackfruit using a kitchen towel to remove excess water.
  3. Heat 1 tablespoon of olive oil and sauté the onion, garlic, and jalapeno until golden and fragrant.
  4. Add the jackfruit and soy sauce, cooking on low heat until moisture evaporates.
  5. Stir in the salt, sugar, and spices, then add the remaining tablespoon of olive oil and cook until the jackfruit is crispy and caramelized.
  6. Adjust seasoning if necessary and serve in tacos, burritos, or bowls.
