Shredded Jackfruit Burritos

black or pinto beans, brown rice, shredded cabbage, sliced avocado, a favorite salsa, cilantro, scallions or red onions
Instructions
- Prepare the jackfruit by draining, rinsing, and slicing it into thin strips.
- Heat olive oil in a skillet over medium-high heat and sauté the onion until softened.
- Add garlic, smoked paprika, and taco seasoning, then stir in the water, lemon juice, salt, and jackfruit.
- Cover and simmer for 5 to 10 minutes until some liquid is absorbed, then mash the jackfruit for a shredded texture.
- To assemble, place fillings off-center on a tortilla, fold the sides, and roll it up.
- Brown the burritos in a skillet with a little olive oil until golden.
