Homemade Taquitos

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the shredded jackfruit with olive oil, garlic, cumin, coriander, cayenne, salt, and pepper on the baking sheet.
- Add the drained green chiles and toss again, then spread in a thin layer on the baking sheet.
- Bake for 15 to 18 minutes until the jackfruit is lightly golden brown, then remove from the pan.
- Warm the tortillas in the oven for 3 to 5 minutes until pliable.
- Spread a strip of refried beans near the left edge of each tortilla, then add some jackfruit mixture, cheese, and scallions.
- Tightly roll each tortilla and place it seam side down on the baking sheet.
- Spray the taquitos generously with olive oil cooking spray and bake for 20 minutes until golden brown and crispy.
- Top with desired toppings and serve.
