Ingredients

The jackfruit

  • 1 20-ounce can jackfruit, rinsed, dried, sorted
  • 1 pinch sea salt
  • 1 pinch black pepper

The sauce

  • 1 Tbsp avocado oil
  • ¼ cup diced red or white onion
  • 2 cloves garlic, minced
  • ½ cup vegetable broth
  • ½ cup unsweetened plain cashew milk
  • 1 chipotle pepper in adobo sauce
  • 1 tsp maple syrup
  • 1 Tbsp lime juice
  • ½ tsp sea salt
  • 1 Tbsp coconut aminos
  • ½ tsp smoked paprika

For serving (optional)

  • to taste red cabbage
  • to taste fresh radish
  • to taste cilantro
  • 1-2 medium limes

Instructions

  1. Rinse and drain the jackfruit, sort the pieces, and remove the tougher core.
  2. Shred the jackfruit into small pieces using hands or forks.
  3. Sauté onion and garlic in a skillet until golden brown.
  4. Blend the sautéed onion and garlic with vegetable broth, cashew milk, chipotle, maple syrup, lime juice, salt, coconut aminos, and smoked paprika until smooth.
  5. Toss the shredded jackfruit with salt and pepper, then mix in the sauce.
  6. Marinate the jackfruit for at least 15-20 minutes, or up to 5 days.
  7. Cook the marinated jackfruit in a skillet over medium heat until golden brown, adding more sauce as desired.
  8. Serve with optional toppings like red cabbage, radish, cilantro, and lime.
