Instructions
- Drain and rinse the jackfruit, then slice off the fibrous core and chop the remaining pieces into small chunks.
- Add the chopped jackfruit to a bowl and mix in the celery, green onions, bell peppers, mayonnaise, and garlic until combined.
- Stir in the dill and season with lemon juice, smoked paprika, salt, and pepper, adjusting to taste.
- Serve in a sandwich, wrap, on a salad, or with crackers. Enjoy with rice cakes and mashed avocado if desired.
