Garlic Cauliflower Mashed Potatoes

Ingredients

The vegetables

  • 1 sm. russet potato, peeled and large diced
  • 1 lg. head cauliflower, cut into florets
  • 1 clove garlic, peeled and smashed

The mixture

  • ½ cup unsweetened nut milk, warm
  • ¼ cup ghee, melted
  • 1 tsp. sea salt

Instructions

  1. 1. Place the potatoes, cauliflower, and garlic in a saucepan with cold salted water and bring to a boil.
  2. 2. Reduce heat and cook for 8-10 minutes until the vegetables are tender.
  3. 3. Drain the vegetables and return them to the pan or place them in a mixing bowl.
  4. 4. Add the warm nut milk, melted ghee, and salt to the vegetables.
  5. 5. Use a potato masher or hand mixer to blend the mixture until creamy.
