Cauliflower Mashed Potatoes

Ingredients

The base

  • 4 medium to large potatoes
  • 1 medium head cauliflower

The creamy components

  • ½ cup milk
  • cup plain Greek yogurt
  • ¼ cup salted butter

Seasonings

  • 2 tsp kosher salt
  • 1 tsp garlic powder
  • to taste freshly ground black pepper

Instructions

  1. Bring milk, yogurt, and butter to room temperature.
  2. In a large pot, add potatoes and cauliflower, cover with cold water, and sprinkle with 1 tsp salt.
  3. Boil over high heat, then reduce to medium and cook until fork tender, about 15-20 minutes.
  4. Drain well and return to the pot.
  5. Add milk, yogurt, butter, garlic powder, remaining salt, and pepper. Mash until creamy.
  6. Taste and adjust seasoning as needed, then serve hot.
