Ingredients

The cauliflower

  • 3 pounds cauliflower
  • 3 cups water

The seasoning and cream

  • 1 tablespoon salt
  • ¼ cup heavy cream
  • ¼ cup butter
  • 1 tablespoon minced fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. 1. In a large saucepan, combine cauliflower florets, water, and 1 tablespoon of salt.
  2. 2. Bring to a boil, then reduce heat, cover, and simmer until the cauliflower is easily pierced with a knife, about 15 minutes.
  3. 3. Drain the cauliflower well and return it to the pot.
  4. 4. Mash the cauliflower thoroughly, then stir in heavy cream, butter, thyme, and adjust salt and pepper to taste.
