Mashed Cauliflower Potatoes

Ingredients

The vegetables

  • 2 lbs Yukon potatoes, peeled and cubed
  • 1 large head cauliflower, cut into florets

The broth and seasonings

  • 2 cups chicken broth
  • 2 sprigs rosemary
  • 3 cloves garlic, minced
  • 1/4 cup butter (or ghee)
  • 3/4 cup plain Greek yogurt
  • 1 tsp salt
  • 1/2 tsp pepper
  • pinch smoked paprika

Instructions

  1. Add the potatoes, cauliflower, and chicken broth to a large sauce pot or dutch oven.
  2. Stir in the minced garlic and rosemary sprigs.
  3. Simmer over medium heat for 20 minutes or until the vegetables are fork tender.
  4. Turn off the heat, remove the rosemary sprigs, and let cool for about 15 minutes.
  5. Add the butter, Greek yogurt, salt, pepper, and smoked paprika.
  6. Mash everything together using a potato masher or hand mixer until creamy.
  7. Serve the mashed cauliflower potatoes.
