Healthy Mashed Potatoes

Instructions
- Peel and cut the potatoes into 2-inch cubes and chop the cauliflower into florets.
- Boil the potatoes in a large pot of salted water for about 15 minutes.
- Add the cauliflower florets and simmer for an additional 8 to 9 minutes until both are soft.
- Drain the potatoes and cauliflower, then return them to the pot.
- Add milk, Greek yogurt, chicken broth, butter, garlic powder, salt, and pepper.
- Mash the mixture until creamy using a potato masher or electric mixer.
- Transfer to a bowl, season with additional salt and pepper as needed, and garnish with fresh herbs.
