Healthy Mashed Potatoes

Ingredients

The potatoes and cauliflower

  • lbs Yukon gold potatoes
  • 1 large head cauliflower

The creamy mixture

  • ¼ cup plain Greek yogurt
  • ½ cup milk
  • ¼ cup low sodium chicken broth
  • 2 tablespoons butter

The seasonings

  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper

The garnish

  • to taste fresh thyme
  • to taste fresh chives

Instructions

  1. Peel and cut the potatoes into 2-inch cubes and chop the cauliflower into florets.
  2. Boil the potatoes in a large pot of salted water for about 15 minutes.
  3. Add the cauliflower florets and simmer for an additional 8 to 9 minutes until both are soft.
  4. Drain the potatoes and cauliflower, then return them to the pot.
  5. Add milk, Greek yogurt, chicken broth, butter, garlic powder, salt, and pepper.
  6. Mash the mixture until creamy using a potato masher or electric mixer.
  7. Transfer to a bowl, season with additional salt and pepper as needed, and garnish with fresh herbs.
