Healthier Mashed Potatoes

Instructions
- Peel, rinse, and cut the potatoes into 4 to 6 pieces.
- Place the potatoes in a medium saucepan, cover with cold salted water, and bring to a boil.
- Lower the heat to a high simmer, cover, and cook until the potatoes are tender, about 20 to 25 minutes.
- Drain the cooked potatoes and let them dry in a colander for a minute or two.
- Return the potatoes to the pot and add the milk and sour cream.
- Beat with an electric mixer, starting on low and increasing to medium-high speed, until smooth.
- Gradually add warm chicken stock, a few tablespoons at a time, until the desired consistency is reached.
- Adjust seasoning and give the potatoes a final whipping before serving.
