Healthier Mashed Potatoes

Ingredients

The potatoes

  • 8-10 medium russet potatoes

The mash

  • ¼ cup sour cream
  • ¼ cup whole milk
  • ¼ to ½ cup warm chicken stock
  • to taste salt
  • to taste ground white pepper

Instructions

  1. Peel, rinse, and cut the potatoes into 4 to 6 pieces.
  2. Place the potatoes in a medium saucepan, cover with cold salted water, and bring to a boil.
  3. Lower the heat to a high simmer, cover, and cook until the potatoes are tender, about 20 to 25 minutes.
  4. Drain the cooked potatoes and let them dry in a colander for a minute or two.
  5. Return the potatoes to the pot and add the milk and sour cream.
  6. Beat with an electric mixer, starting on low and increasing to medium-high speed, until smooth.
  7. Gradually add warm chicken stock, a few tablespoons at a time, until the desired consistency is reached.
  8. Adjust seasoning and give the potatoes a final whipping before serving.
