Instructions
- Cut the peeled sweet potatoes into bite-sized chunks.
- Steam the sweet potato chunks for 20-25 minutes until fork-tender.
- In a skillet, heat olive oil and sauté the onion and garlic with a pinch of salt for about 8 minutes until fragrant and translucent.
- In a bowl, combine the steamed sweet potatoes, sautéed onion and garlic, rosemary, and Greek yogurt.
- Mash the mixture together and season with salt and pepper.
