Ingredients

The base

  • 3 pounds sweet potatoes

The sauté

  • 1 teaspoon extra virgin olive oil
  • ½ cup diced onion
  • 2 cloves garlic
  • 1 teaspoon fresh rosemary

The creamy element

  • cup organic Greek yogurt

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Cut the peeled sweet potatoes into bite-sized chunks.
  2. Steam the sweet potato chunks for 20-25 minutes until fork-tender.
  3. In a skillet, heat olive oil and sauté the onion and garlic with a pinch of salt for about 8 minutes until fragrant and translucent.
  4. In a bowl, combine the steamed sweet potatoes, sautéed onion and garlic, rosemary, and Greek yogurt.
  5. Mash the mixture together and season with salt and pepper.
  6. Serve warm.
