Garlic Cauliflower Mashed Potatoes

Ingredients

The main ingredients

  • 1 large head cauliflower
  • 1 packet peeled garlic
  • 2 tablespoons butter

Seasoning

  • to taste salt
  • to taste fresh cracked pepper
  • to taste nutmeg

Instructions

  1. Fill a large stock pot with an inch or two of water and place a steamer insert inside.
  2. Bring the water to a boil.
  3. Wash and trim the cauliflower, cutting it into florets and stems.
  4. Slice the garlic cloves.
  5. Once the water is boiling, add the cauliflower stems, half of the florets, and all of the garlic, seasoning with salt.
  6. Add the remaining cauliflower florets, season with more salt, and cover the pot to steam for about 10 minutes until soft.
  7. Drain the steamed cauliflower and garlic in a colander.
  8. Transfer the drained mixture to a food processor.
  9. Add fresh cracked pepper, nutmeg, and butter to the food processor.
  10. Process the mixture until smooth, adjusting seasoning as needed.
  11. Store the faux mashed potatoes in a covered container in the fridge.
