Garlic Cauliflower Mashed Potatoes

Instructions
- Fill a large stock pot with an inch or two of water and place a steamer insert inside.
- Bring the water to a boil.
- Wash and trim the cauliflower, cutting it into florets and stems.
- Slice the garlic cloves.
- Once the water is boiling, add the cauliflower stems, half of the florets, and all of the garlic, seasoning with salt.
- Add the remaining cauliflower florets, season with more salt, and cover the pot to steam for about 10 minutes until soft.
- Drain the steamed cauliflower and garlic in a colander.
- Transfer the drained mixture to a food processor.
- Add fresh cracked pepper, nutmeg, and butter to the food processor.
- Process the mixture until smooth, adjusting seasoning as needed.
- Store the faux mashed potatoes in a covered container in the fridge.
