Ingredients

Focaccia

  • 2 cups part-skim shredded mozzarella cheese
  • 2 ounces cream cheese
  • 2 cups almond flour
  • 1 tablespoon baking powder
  • teaspoon salt
  • 3 large eggs
  • 1-2 tablespoons olive oil dipping sauce

Olive Oil Dipping Sauce

  • cup Carapelli® Organic Extra Virgin Olive Oil
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh minced parsley
  • 2 teaspoons fresh minced rosemary
  • 1 ½ teaspoons dried Italian seasoning
  • ¼ teaspoon red pepper flakes
  • teaspoon salt
  • teaspoon pepper

Instructions

  1. Preheat the oven to 400°F and prepare a quarter sheet pan with parchment paper.
  2. Grease the pan with olive oil from the dipping sauce.
  3. Combine all focaccia ingredients in a food processor and blend until a sticky dough forms.
  4. Spread the dough evenly in the prepared pan, dimpling the surface with your fingertips.
  5. Drizzle a small amount of the olive oil dipping sauce over the top.
  6. Bake for 12-18 minutes until lightly browned, adding ice cubes to the oven for steam.
  7. Cool for 10 minutes, then cut into 12 pieces.
  8. Mix the dipping sauce ingredients in a jar and let sit overnight for best flavor.
