Instant Pot 15 Bean Soup

Instructions
- Rinse the beans and discard any debris, then set aside.
- Sauté the olive oil, onion, bay leaves, and celery until the onion is translucent.
- Add the garlic and cook for about a minute.
- Stir in the beans, carrots, and broth, scraping the bottom of the pot.
- Add the pepper, thyme, and ham hocks or ham bone.
- Close the lid and set to pressure cook for 60 minutes on high pressure.
- After cooking, allow a natural pressure release for 15 minutes, then release any remaining pressure manually.
- Remove the ham hocks or ham bone, and discard the bay leaves and thyme stem.
- Add the seasoning packet and diced tomatoes to the soup and stir.
- Remove the meat from the ham hocks or bone, discard the bone and fat, and add the meat to the soup.
- Taste and adjust seasoning as desired, then serve hot.
