Instructions
- Rinse the bean mix in a colander until the water runs clear, then soak the beans in water for 8 hours.
- In a large pot, cook the diced bacon until crispy, then remove and set aside, keeping the fat in the pot.
- Add diced onion, minced garlic, and chopped celery to the pot and cook until tender.
- Stir in the seasoning packet, chili powder, salt, and pepper, mixing well.
- Pour in the chicken broth and add the soaked beans, stirring to combine, then let simmer uncovered for 1 hour.
- After an hour, add the diced tomatoes and cooked bacon, and simmer for an additional 30 minutes.
- Taste and adjust seasoning as needed, then serve warm with optional toppings.
