Ingredients

The soup base

  • 1 20-ounce bag Hurst's HamBeens 15 Bean Soup mix with seasoning packet
  • 6 cups low sodium chicken broth
  • 1 15-ounce can diced tomatoes (not drained)

The meat and vegetables

  • 4 strips bacon (diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • ΒΌ cup celery (chopped)

The spices

  • 1 teaspoon chili powder
  • to taste salt
  • to taste freshly cracked black pepper

Optional toppings

  • shredded cheddar cheese
  • sliced green onions

Instructions

  1. Rinse the bean mix in a colander until the water runs clear, then soak the beans in water for 8 hours.
  2. In a large pot, cook the diced bacon until crispy, then remove and set aside, keeping the fat in the pot.
  3. Add diced onion, minced garlic, and chopped celery to the pot and cook until tender.
  4. Stir in the seasoning packet, chili powder, salt, and pepper, mixing well.
  5. Pour in the chicken broth and add the soaked beans, stirring to combine, then let simmer uncovered for 1 hour.
  6. After an hour, add the diced tomatoes and cooked bacon, and simmer for an additional 30 minutes.
  7. Taste and adjust seasoning as needed, then serve warm with optional toppings.
