Ingredients

The pickling liquid

  • ½ cup apple cider vinegar
  • 1 Tbsp. sugar
  • tsp. kosher salt (Diamond Crystal) or ¾ tsp. Morton kosher salt
  • 1 cup water

The onions

  • 1 red onion, thinly sliced

Instructions

  1. Whisk together apple cider vinegar, sugar, kosher salt, and water in a small bowl until dissolved.
  2. Place the thinly sliced red onion in a mason jar with a tight-fitting lid.
  3. Pour the vinegar mixture over the onions.
  4. Let the mixture sit at room temperature for 1 hour before using.
