Ingredients

The Brussels Sprouts

  • 1 pound Brussels sprouts

The Dressing

  • 2 tablespoons extra-virgin olive oil
  • tablespoons balsamic vinegar
  • 2 teaspoons honey or maple syrup
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper

The Toppings

  • cup toasted pecan halves
  • 2 tablespoons dried cranberries or pomegranate arils
  • to taste fresh parsley leaves

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare the Brussels sprouts by trimming tough ends and removing loose leaves, then halve them and place on the baking sheet.
  3. Drizzle the Brussels sprouts with olive oil, balsamic vinegar, and honey, then sprinkle with salt and pepper and toss to coat.
  4. Arrange the Brussels sprouts cut side down in a single layer on the baking sheet.
  5. Roast for 20 to 30 minutes until tender and golden brown, checking for doneness based on size.
  6. Season to taste and transfer to a serving dish, gently tossing with pecans and cranberries, and garnish with parsley before serving.
