Ingredients

  • 2 cups blanched almonds
  • cups water

Instructions

  1. Soak the almonds overnight in enough water to cover plus 2 inches.
  2. Strain the almonds and rinse them well.
  3. If your almonds have skins, pour boiling water over them to remove the skins.
  4. Add the almonds to a food processor and begin pureeing.
  5. Slowly add the water while the machine is running.
  6. Continue pureeing for about one minute after all the water is added.
  7. Place a cheesecloth over a strainer set inside a bowl.
  8. Pour the puree over the cloth, lift and squeeze to extract the cream.
  9. Refrigerate the cream in a glass container with a lid.
