Dairy-Free Coffee Creamer

Instructions
- Soak the almonds overnight in enough water to cover plus 2 inches.
- Strain the almonds and rinse them well.
- If your almonds have skins, pour boiling water over them to remove the skins.
- Add the almonds to a food processor and begin pureeing.
- Slowly add the water while the machine is running.
- Continue pureeing for about one minute after all the water is added.
- Place a cheesecloth over a strainer set inside a bowl.
- Pour the puree over the cloth, lift and squeeze to extract the cream.
- Refrigerate the cream in a glass container with a lid.
