Rhubarb & Rosewater Syrup

Instructions
- Combine rhubarb and sugar in a saucepan, stir well, and let sit for 45 minutes.
- Add water and bring to a gentle simmer, stirring until sugar dissolves.
- Simmer for 15-20 minutes until rhubarb breaks down, then strain through a cheesecloth-lined strainer.
- Transfer the liquid to a clean saucepan, stir in lime juice, and simmer for another 15 minutes until thickened.
- Remove from heat, allow to cool, and stir in rosewater to taste.
