Ingredients

  • 1 head Cauliflower (cut into florets)
  • ¼ cup Avocado oil
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper
  • 1 cup Sour cream
  • 6 tbsp Heavy cream
  • 2 tbsp Dijon mustard
  • 4 cloves Garlic (minced)
  • 2 cups Swiss cheese (shredded, divided)
  • lb Shredded chicken (cooked, weight after cooking)
  • 12 oz Ham (deli slices, chopped)
  • ½ oz Pork rinds (optional; crushed to a breadcrumb consistency)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Toss the cauliflower with avocado oil, sea salt, and black pepper, then arrange on a baking sheet and roast for 25-30 minutes until golden.
  3. In a large bowl, mix together sour cream, heavy cream, Dijon mustard, garlic, and half of the shredded cheese.
  4. Stir in the shredded chicken and ham.
  5. Once the cauliflower is done, stir it into the mixture and adjust seasoning if needed.
  6. Transfer the mixture to a casserole dish, top with the remaining cheese and crushed pork rinds if using.
  7. Bake for 10 minutes until the cheese is melted, optionally broil for 2-3 minutes to brown the topping.
