Instructions
- Preheat the oven to 400°F (204°C).
- Toss the cauliflower with avocado oil, sea salt, and black pepper, then arrange on a baking sheet and roast for 25-30 minutes until golden.
- In a large bowl, mix together sour cream, heavy cream, Dijon mustard, garlic, and half of the shredded cheese.
- Stir in the shredded chicken and ham.
- Once the cauliflower is done, stir it into the mixture and adjust seasoning if needed.
- Transfer the mixture to a casserole dish, top with the remaining cheese and crushed pork rinds if using.
- Bake for 10 minutes until the cheese is melted, optionally broil for 2-3 minutes to brown the topping.
