Ingredients

The chicken and filling

  • 10 ounces chicken breasts
  • 3-4 oz Gruyere cheese
  • ¼ lb deli ham

The breading

  • 1 ½ cups panko breadcrumbs
  • 1 large egg
  • ¼ cup cold water or milk
  • ½ cup all-purpose flour
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Dijon Cheese Sauce

  • 1 ½ tablespoons butter
  • 1 ½ tablespoons flour
  • 1-1 ½ cups chicken stock
  • ½ cup heavy cream
  • 2 tablespoons Dijon mustard
  • ½ cup Gruyere cheese, shredded

Instructions

  1. Preheat the oven to 350°F.
  2. Pound the chicken breasts between plastic wrap until thin.
  3. Place two slices of ham and half the shredded cheese in the center of each breast.
  4. Wrap the chicken around the ham and cheese, sealing the edges.
  5. Refrigerate the stuffed chicken for 20 minutes if possible.
  6. Set up a breading station with seasoned flour, egg wash, and breadcrumbs.
  7. Coat the chicken in flour, then egg wash, and finally breadcrumbs.
  8. Heat oil in a pan and brown the chicken on all sides.
  9. Transfer the browned chicken to a baking sheet and bake for 25-30 minutes until cooked through.
  10. For the sauce, melt butter and whisk in flour to make a roux.
  11. Add chicken stock gradually, then stir in mustard and cream.
  12. Add shredded cheese to the sauce and adjust seasoning as needed.
  13. Serve the chicken with the sauce and garnish with parsley.
