Ingredients

The chicken

  • 4 pieces boneless, skinless chicken breasts (6 oz each)

The filling

  • 4 oz thinly sliced deli ham
  • 3 oz thinly sliced Swiss cheese

The coating

  • 2 tablespoons all-purpose flour
  • 2 large egg whites, beaten
  • 6 tablespoons corn flake crumbs

The seasoning

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried parsley flakes
  • teaspoon onion powder
  • teaspoon cayenne pepper

Miscellaneous

  • a few pieces toothpicks

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper or foil.
  2. Pound the chicken breasts to a ¼ inch thickness.
  3. Place one ounce of ham and ¾ ounce of Swiss cheese on each breast, then roll them up and seal with toothpicks.
  4. Coat the rolled chicken in flour by placing them in a Ziploc bag and shaking.
  5. Dip the floured chicken in beaten egg whites, then coat with a mixture of corn flake crumbs and seasonings.
  6. Arrange the coated chicken seam side down on the baking sheet and mist with olive oil spray.
  7. Bake for 30 minutes until the chicken is cooked through, then remove toothpicks before serving.
