Instructions
- Whisk together chicken broth and cornstarch until smooth, then mix in cream and dijon mustard.
- Pour flour into a shallow dish and whisk in salt and pepper.
- Heat olive oil in a skillet over medium-high heat, dredge chicken in flour, and add to the skillet.
- Cook chicken for about 4-5 minutes until golden brown, then flip and cook until the center reaches 165°F, layering ham and cheese during the last minute.
- Transfer chicken to a plate and cover to keep warm.
- Pour the chicken broth mixture into the skillet, season, and let it simmer for about 1 minute while stirring.
- Return chicken to the skillet, sprinkle with crouton crumbs and parsley, and serve warm with sauce.
