Ingredients

The chicken and sauce

  • ¾ cup low-sodium chicken broth
  • 2 tsp cornstarch
  • ¼ cup heavy cream
  • 1 Tbsp dijon mustard
  • 4 (5 - 6 oz) chicken breasts, pounded to an even thickness
  • ¼ cup all-purpose flour
  • Tbsp olive oil
  • Salt and freshly ground black pepper

The toppings

  • 4 slices smoked deli ham
  • 4 slices swiss cheese
  • ¾ cup garlic butter croutons, finely crushed
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Whisk together chicken broth and cornstarch until smooth, then mix in cream and dijon mustard.
  2. Pour flour into a shallow dish and whisk in salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat, dredge chicken in flour, and add to the skillet.
  4. Cook chicken for about 4-5 minutes until golden brown, then flip and cook until the center reaches 165°F, layering ham and cheese during the last minute.
  5. Transfer chicken to a plate and cover to keep warm.
  6. Pour the chicken broth mixture into the skillet, season, and let it simmer for about 1 minute while stirring.
  7. Return chicken to the skillet, sprinkle with crouton crumbs and parsley, and serve warm with sauce.
