Mustard Cream Sauce

Ingredients

  • 1 cup sour cream
  • 1 cup heavy cream
  • 4 large egg yolks
  • 3 ½ tablespoons Dijon mustard
  • 2 tablespoons white wine vinegar
  • ¼ teaspoon granulated sugar
  • to taste salt and freshly ground black pepper
  • 2 tablespoons fresh chives, minced

Instructions

  1. Whisk together sour cream, heavy cream, egg yolks, Dijon mustard, vinegar, sugar, and salt in a saucepan.
  2. Cook the mixture over medium heat, whisking constantly until it thickens and coats the back of a spoon, about 4 to 5 minutes.
  3. Transfer the sauce to a serving bowl, stir in chives, and season with additional salt and pepper to taste.
  4. Serve warm or at room temperature.
