Instructions
- Whisk together sour cream, heavy cream, egg yolks, Dijon mustard, vinegar, sugar, and salt in a saucepan.
- Cook the mixture over medium heat, whisking constantly until it thickens and coats the back of a spoon, about 4 to 5 minutes.
- Transfer the sauce to a serving bowl, stir in chives, and season with additional salt and pepper to taste.
- Serve warm or at room temperature.
