Ingredients

The cookie dough

  • 1 cup creamy unsalted almond butter
  • cup honey (or liquid stevia, to taste)
  • 1 whole egg (or a flax egg)
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda

Add-ins

  • ½ cup unsweetened shredded coconut
  • ½ cup raisins

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix the almond butter, honey, egg, sea salt, cinnamon, and baking soda until smooth.
  3. Gently fold in the shredded coconut and raisins.
  4. Drop tablespoon-sized amounts of batter onto a baking sheet lined with parchment paper.
  5. Bake for 10 minutes, rotating the pan halfway through, until the edges are golden brown.
  6. Allow the cookies to cool on the pan for 10 minutes before transferring to a cooling rack.
  7. Serve at room temperature or chill in the freezer for a cool treat.
