Instructions
- Preheat the oven to 350°F.
- In a medium bowl, mix the almond butter, honey, egg, sea salt, cinnamon, and baking soda until smooth.
- Gently fold in the shredded coconut and raisins.
- Drop tablespoon-sized amounts of batter onto a baking sheet lined with parchment paper.
- Bake for 10 minutes, rotating the pan halfway through, until the edges are golden brown.
- Allow the cookies to cool on the pan for 10 minutes before transferring to a cooling rack.
- Serve at room temperature or chill in the freezer for a cool treat.
