Ingredients

The biscuits

  • 2 1/2 cups blanched almond flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • ¼ cup coconut oil, softened (or butter)
  • 2 large eggs, at room temperature
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon

The frosting

  • 2 tablespoons coconut oil, softened
  • 2 tablespoons raw honey
  • ½ teaspoon vanilla extract
  • 1 pinch sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together almond flour, sea salt, cinnamon, and baking soda.
  3. In another bowl, stir together softened coconut oil, eggs, and honey, then combine with the dry ingredients to form a dough.
  4. Stir in the raisins and scoop out 8 portions of dough, shaping them into biscuits.
  5. Place the biscuit dough on a lined baking sheet and bake for 13-15 minutes.
  6. Allow the biscuits to cool on the pan for 5 minutes before transferring to a wire rack.
  7. For the frosting, whip together coconut oil, honey, vanilla, and salt until creamy, then spread on the cooled biscuits.
