Ingredients

The base

  • 1 cup shredded unsweetened coconut
  • 2 Tbsp hemp seeds
  • 1 ½ Tbsp vegan plain or vanilla protein powder
  • ½ cup roasted or raw cashew butter
  • ¼ cup coconut butter (melted)
  • 2-4 pieces pitted dates
  • 1-2 tsp matcha powder
  • ½ tsp vanilla extract (optional)
  • ½ cup almond flour

For topping (optional)

  • 2 Tbsp coconut butter
  • 2 Tbsp shredded coconut or hemp seeds

Instructions

  1. Add all ingredients to a food processor and blend until a thick, moldable dough forms.
  2. If the mixture is too thick, add more cashew butter or a date; if too wet, add more almond flour.
  3. Taste and adjust flavors as needed.
  4. Scoop out 1-Tbsp amounts and roll into balls, yielding about 22.
  5. Enjoy as is, or chill before topping with melted coconut butter.
  6. Store in the freezer for up to 1 month or in the refrigerator for up to 1 week.
