Instructions
- Combine cashews, almonds, coconut, sea salt, and vanilla bean powder in a food processor and process until fine.
- Add Medjool dates and process until the mixture sticks together and can be formed into a ball.
- Using a tablespoon or cookie scoop, form the mixture into balls.
- If desired, roll the balls in almond flour or desiccated coconut.
