Ingredients

The base

  • ½ cup dried apricots
  • ½ cup hot water
  • 4 cups unsweetened shredded coconut
  • 1 cup almond flour
  • 1 cup raisins
  • ½ cup dried cranberries
  • ½ cup date paste
  • ¼ cup chia seeds

The flavorings

  • 1 tsp pure vanilla extract
  • 1 tsp pure almond extract
  • ½ tsp pure orange extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Optional coatings

  • to taste finely chopped shredded coconut
  • to taste finely chopped dried cranberries
  • to taste finely chopped pistachios
  • to taste almond flour
  • to taste cocoa powder

Instructions

  1. Soak the dried apricots in hot water for 15 minutes.
  2. Puree the soaked apricots with the soaking water in a food processor.
  3. Add shredded coconut and almond flour to the puree and process until sticky.
  4. Add the remaining ingredients and pulse until a malleable paste forms.
  5. Use a small ice cream scoop to form 1-inch balls and roll them in your hands.
  6. Optionally, roll the balls in chopped coconut, cranberries, pistachios, almond flour, or cocoa powder.
  7. Store in an airtight container in the refrigerator for up to 1 month or freeze for up to 4 months.
