Instructions
- Soak the dried apricots in hot water for 15 minutes.
- Puree the soaked apricots with the soaking water in a food processor.
- Add shredded coconut and almond flour to the puree and process until sticky.
- Add the remaining ingredients and pulse until a malleable paste forms.
- Use a small ice cream scoop to form 1-inch balls and roll them in your hands.
- Optionally, roll the balls in chopped coconut, cranberries, pistachios, almond flour, or cocoa powder.
- Store in an airtight container in the refrigerator for up to 1 month or freeze for up to 4 months.
