Ingredients

The base

  • 1 cup raw walnuts
  • ½ cup packed pitted dates
  • cup almond pulp
  • cup cacao powder or unsweetened cocoa powder
  • 3 Tbsp hemp seeds
  • ¼ tsp sea salt
  • 3 Tbsp creamy almond butter

For rolling

  • as needed cacao powder or hemp seeds

Instructions

  1. Pulse walnuts in a food processor until they become a meal.
  2. Add dates, almond pulp, cacao powder, hemp seeds, sea salt, and almond butter to the processor and mix until a moist dough forms.
  3. Refrigerate the mixture for 10 minutes.
  4. Scoop out rounded tablespoon amounts and roll them into balls.
  5. Roll the balls in extra cacao powder or hemp seeds if desired.
  6. Store leftovers in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 1 month.
