Ingredients

  • 4 pieces pre-cooked organic chicken sausage, sliced
  • 1 tbsp extra virgin olive oil
  • 1 large onion
  • 3 pieces bell peppers (various colors)
  • 2 cloves garlic, chopped
  • 8 oz white or Cremini mushrooms, sliced
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 15 oz can low sodium diced tomatoes
  • ½ cup low sodium organic chicken broth
  • to taste salt and pepper

Instructions

  1. Heat 1 tsp of olive oil in a skillet over medium-high heat and brown the sausage for 2-4 minutes on each side, then set aside.
  2. Add the remaining oil to the skillet and sauté the onions, peppers, garlic, and mushrooms for about 10 minutes until tender.
  3. Return the sausage to the skillet and add the Italian seasoning, garlic powder, diced tomatoes, and chicken broth.
  4. Simmer for an additional 5-10 minutes until everything is heated through and the veggies reach your desired tenderness.
  5. Serve and enjoy!
