Clean Eating Apple Chicken Sausage

Ingredients

  • 1 tbsp coconut oil
  • 1 small onion, diced (about 1 cup)
  • 1 cup apple, diced (about 1 cup)
  • 1 lb ground chicken thighs
  • ¼ cup fresh chopped parsley
  • 1 tsp poultry seasoning
  • 1 tsp fennel seeds, chopped
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Heat 1 tsp of coconut oil in a large non-stick sauté pan over medium heat.
  2. Add the onions with a pinch of salt and cook for 2 minutes.
  3. Toss in the apples and cook for another 2 minutes until tender.
  4. Remove from heat and let cool for 5 minutes in a glass bowl.
  5. Combine the cooled onions and apples with ground chicken, parsley, poultry seasoning, fennel seeds, smoked paprika, salt, and pepper.
  6. Mix everything together and form into 8 equal-sized patties.
  7. Heat another teaspoon of coconut oil in the pan and sauté the sausage patties for 3 minutes on each side until cooked through.
