Instructions
- Preheat the oven to 350°F.
- Combine flour, baking powder, baking soda, and salt in a bowl and set aside.
- Cream together butter, brown sugar, and powdered sugar until light and fluffy.
- Add peanut butter and egg, and mix until smooth.
- Incorporate mashed banana and vanilla, beating until smooth.
- Gradually add the flour mixture and stir in chocolate chips.
- Drop about two teaspoons of dough onto prepared baking sheets.
- Bake for 7 to 10 minutes, being careful not to overcook.
- Cool completely before filling.
- For the filling, whisk egg whites, sugar, and cream of tartar over simmering water until warm.
- Transfer to a mixer and beat until stiff peaks form, then add vanilla.
- Flip half the cookies flat side up and spoon or pipe marshmallow frosting on them.
- Top with the other half of the cookies and let set for about 1 hour.
