Ingredients

The cookies

  • 1 ¾ cup flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, softened
  • ½ cup brown sugar
  • ¾ cup powdered sugar
  • ½ cup peanut butter
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 cup mashed banana (about ½ banana)
  • ¾ cup chocolate chips

The marshmallow filling

  • 4 large egg whites
  • 1 cup sugar
  • ¼ teaspoon cream of tartar

Instructions

  1. Preheat the oven to 350°F.
  2. Combine flour, baking powder, baking soda, and salt in a bowl and set aside.
  3. Cream together butter, brown sugar, and powdered sugar until light and fluffy.
  4. Add peanut butter and egg, and mix until smooth.
  5. Incorporate mashed banana and vanilla, beating until smooth.
  6. Gradually add the flour mixture and stir in chocolate chips.
  7. Drop about two teaspoons of dough onto prepared baking sheets.
  8. Bake for 7 to 10 minutes, being careful not to overcook.
  9. Cool completely before filling.
  10. For the filling, whisk egg whites, sugar, and cream of tartar over simmering water until warm.
  11. Transfer to a mixer and beat until stiff peaks form, then add vanilla.
  12. Flip half the cookies flat side up and spoon or pipe marshmallow frosting on them.
  13. Top with the other half of the cookies and let set for about 1 hour.
