Ingredients

The doughnuts

  • 2 cups sweet rice flour
  • ½ cup whole milk
  • 3 tablespoons whole milk
  • 1 large egg
  • ¼ cup granulated sugar
  • 3 teaspoons baking powder
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla

The chocolate glaze

  • cup coconut milk
  • 12 ounces dark chocolate
  • cup powdered sugar
  • to taste flaky sea salt

The vanilla glaze (optional)

  • 2 cups powdered sugar
  • 6 tablespoons unsalted butter
  • 1 teaspoon vanilla
  • 5-6 tablespoons warm water

Instructions

  1. In a microwave-safe bowl, mix ¼ cup sweet rice flour with 3 tablespoons milk and microwave until cooked through.
  2. In a stand mixer, combine remaining sweet rice flour, milk, egg, sugar, baking powder, melted butter, and vanilla, then add the cooked rice mixture.
  3. Knead the dough until smooth, then roll it out to ½ inch thick and cut out doughnuts.
  4. Heat oil in a pot to 330°F and fry doughnuts for 2-3 minutes on each side until golden.
  5. For the chocolate glaze, heat coconut milk in a saucepan, then stir in chocolate until melted, add powdered sugar and vanilla.
  6. Dip or drizzle each doughnut with the chocolate glaze and sprinkle with sea salt.
