Instructions
- In a microwave-safe bowl, mix ¼ cup sweet rice flour with 3 tablespoons milk and microwave until cooked through.
- In a stand mixer, combine remaining sweet rice flour, milk, egg, sugar, baking powder, melted butter, and vanilla, then add the cooked rice mixture.
- Knead the dough until smooth, then roll it out to ½ inch thick and cut out doughnuts.
- Heat oil in a pot to 330°F and fry doughnuts for 2-3 minutes on each side until golden.
- For the chocolate glaze, heat coconut milk in a saucepan, then stir in chocolate until melted, add powdered sugar and vanilla.
- Dip or drizzle each doughnut with the chocolate glaze and sprinkle with sea salt.
