Ingredients

The doughnuts

  • 1 ¼ cups whole wheat pastry flour or all-purpose flour
  • ¼ cup coconut sugar or another granulated sugar
  • 1 tablespoon ceremonial grade matcha powder
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup unflavored soy or almond milk
  • ¼ cup coconut oil (liquid state)
  • 2 teaspoons vanilla extract

The almond glaze

  • ½ cup powdered sugar
  • 1 tablespoon unflavored soy or almond milk
  • ½ teaspoon almond extract

For topping

  • ¼ cup finely chopped almonds

Instructions

  1. Preheat the oven to 350°F and lightly oil a 6 cavity doughnut pan.
  2. In a medium bowl, mix the flour, sugar, matcha, baking powder, and salt.
  3. In another bowl, combine the milk, coconut oil, and vanilla, then mix with the dry ingredients until a thick batter forms.
  4. Pipe or spoon the batter into the doughnut cavities and bake for 10 to 12 minutes until the tops spring back.
  5. Remove from the oven and let cool on a rack.
  6. While cooling, mix the glaze ingredients, adjusting consistency as needed.
  7. Once cooled, dip the tops of the doughnuts in the glaze and sprinkle with chopped almonds.
  8. Allow to rest until the glaze sets, then serve.
