Ingredients

The Doughnuts

  • ½ cup non-dairy milk
  • ¼ cup Earth Balance, melted
  • 3 tbsp applesauce
  • 1 tsp vanilla extract
  • ½ tsp apple cider vinegar (or white vinegar)
  • 1 cup whole wheat pastry flour (or all purpose)
  • ½ cup organic cane sugar (or white sugar)
  • ½ tsp kosher salt
  • ¼ tsp baking soda
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • cup chocolate chips

The Cookie Dough Glaze

  • ¼ cup non-dairy milk
  • 1 tbsp non-dairy milk
  • ¼ cup cashew butter
  • 2 tbsp Earth Balance, melted
  • ¼ cup whole wheat pastry flour
  • ¼ cup organic cane sugar (or white sugar)
  • ¼ tsp kosher salt
  • ¼ tsp cinnamon
  • 1 tbsp chia seeds (optional)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease the doughnut pans with Earth Balance.
  2. In a large bowl, whisk together the wet ingredients: non-dairy milk, melted Earth Balance, applesauce, vanilla extract, and vinegar.
  3. Sift in the dry ingredients and stir until just combined.
  4. Fold in the chocolate chips.
  5. Bake for 12 minutes or until the doughnuts spring back when touched.
  6. Prepare the cookie dough glaze while the doughnuts are baking.
  7. Remove the doughnuts from the oven and cool in the pan for 10 minutes, then transfer to a cooling rack for another 10 minutes.
  8. Dip the doughnuts into the glaze and serve immediately.
