Instructions
- Preheat the oven to 350°F and grease the doughnut pans with Earth Balance.
- In a large bowl, whisk together the wet ingredients: non-dairy milk, melted Earth Balance, applesauce, vanilla extract, and vinegar.
- Sift in the dry ingredients and stir until just combined.
- Fold in the chocolate chips.
- Bake for 12 minutes or until the doughnuts spring back when touched.
- Prepare the cookie dough glaze while the doughnuts are baking.
- Remove the doughnuts from the oven and cool in the pan for 10 minutes, then transfer to a cooling rack for another 10 minutes.
- Dip the doughnuts into the glaze and serve immediately.
