Ingredients

The glaze

  • 1 ½ cup sliced strawberries
  • 2 tablespoons granulated sugar
  • 1 cup powdered sugar, sifted

The doughnuts

  • 3 tablespoons unsalted butter
  • 1 teabag sencha green tea
  • 2 tablespoons vegetable oil
  • ¼ cup granulated sugar
  • 3 tablespoons brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 ⅓ cups all-purpose flour
  • ½ cup milk

Instructions

  1. Prepare the glaze by smashing strawberries with sugar and letting them sit to draw out juice.
  2. Preheat the oven to 425°F and grease the doughnut pan.
  3. Melt butter and steep the sencha green tea bag in it for about ten minutes.
  4. In a bowl, mix the tea-infused butter, vegetable oil, granulated sugar, and brown sugar until well combined.
  5. Add the egg and vanilla extract, then mix in baking powder, baking soda, nutmeg, and salt.
  6. Incorporate half of the flour, then add the milk, followed by the remaining flour until just combined.
  7. Transfer the batter to a piping bag and fill the doughnut pan three-quarters full.
  8. Bake for 9-11 minutes until golden and springy, then cool in the pan for 5 minutes before transferring to a rack.
  9. For the glaze, mix powdered sugar with strawberry juice until smooth, then dip the cooled doughnuts in the glaze.
  10. Sprinkle with rainbow sprinkles immediately and let the glaze set for 10-15 minutes before serving.
