Ingredients

  • 2 2/3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp cream of tartar
  • 1 tsp salt
  • 2 cups brown sugar, packed
  • 1 cup butter, at room temperature
  • 2 large eggs, at room temperature
  • 1 Tbsp vanilla extract
  • 1 cup cinnamon chips, optional

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch pan with nonstick spray and parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cream of tartar, and salt.
  3. In a large bowl, cream the butter and brown sugar together until smooth, then mix in the eggs one at a time followed by the vanilla.
  4. Combine the flour mixture with the butter mixture until well blended, then fold in cinnamon chips if using.
  5. Spread the thick batter evenly in the prepared pan and pat it down with sprayed hands.
  6. Bake for 25 to 30 minutes, or until the surface springs back when pressed. Let cool completely before cutting.
