Instructions
- Preheat the oven to 350°F and line an 8x8-inch pan with parchment paper.
- In a mixing bowl, beat melted butter and dark brown sugar until smooth.
- Add eggs one at a time, then mix in milk, vanilla, cinnamon, and salt.
- Sprinkle in baking powder, baking soda, whole wheat pastry flour, and all-purpose flour, stirring just until combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes until the middle is set and a toothpick comes out clean.
- Let cool for 5 minutes in the pan.
- For the topping, mix granulated sugar and cinnamon, brush the blondies with melted butter, and sprinkle the sugar mixture on top.
- Lift the blondies from the pan using the parchment paper and let cool completely before slicing.
