Cinnamon Blondies

Instructions
- 1. Preheat the oven to 325°F and adjust the oven rack to the lowest position.
- 2. Spray an 8-inch square metal baking pan with vegetable oil cooking spray.
- 3. Line the pan with a 16-inch piece of heavy-duty foil, leaving overhangs for easy removal, and spray the foil with vegetable oil spray.
- 4. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
- 5. In another medium bowl, whisk the brown sugar into the melted butter.
- 6. In a small bowl, whisk the eggs and vanilla together, then add to the butter mixture.
- 7. Combine the wet and dry ingredients until just mixed, then fold in the cinnamon chips or your chosen stir-ins.
- 8. Pour the batter into the prepared pan and bake for about 40 minutes until just set.
- 9. Let the blondies cool for 5 minutes, then use the foil overhangs to lift them out of the pan and cool on a wire rack.
- 10. Once cooled, cut into squares and serve.
