Chinese Lemon Chicken

Ingredients

The chicken

  • lbs boneless skinless chicken breasts, cut into 1 inch pieces
  • 2 eggs lightly beaten
  • to taste salt and pepper
  • ½ cup all purpose flour
  • ½ cup cornstarch
  • 1 tbsp cornstarch
  • oil for frying canola or vegetable oil

The sauce

  • cup lemon juice
  • cup sugar
  • ½ cup water
  • 2 tsps sesame seeds
  • 2 tbsp sliced green onions
  • 1 tsp grated lemon zest

Instructions

  1. Combine the eggs, salt, and pepper in a bowl.
  2. Mix the flour and ½ cup of cornstarch in a shallow bowl.
  3. Dip each chicken piece into the egg mixture, then coat with flour.
  4. Heat oil in a deep pan to 350°F.
  5. Fry the chicken pieces in batches for about 5 minutes until golden brown.
  6. Drain the fried chicken on paper towels.
  7. In a saucepan, combine lemon juice, sugar, and water, and bring to a simmer.
  8. Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then add to the sauce.
  9. Boil the sauce for 1-2 minutes until thickened.
  10. Toss the chicken with the lemon sauce and stir in lemon zest.
  11. Garnish with sesame seeds and green onions, then serve immediately.
