Chinese Lemon Chicken

The chicken

The sauce

lemon juice

Instructions
- Combine the eggs, salt, and pepper in a bowl.
- Mix the flour and ½ cup of cornstarch in a shallow bowl.
- Dip each chicken piece into the egg mixture, then coat with flour.
- Heat oil in a deep pan to 350°F.
- Fry the chicken pieces in batches for about 5 minutes until golden brown.
- Drain the fried chicken on paper towels.
- In a saucepan, combine lemon juice, sugar, and water, and bring to a simmer.
- Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, then add to the sauce.
- Boil the sauce for 1-2 minutes until thickened.
- Toss the chicken with the lemon sauce and stir in lemon zest.
- Garnish with sesame seeds and green onions, then serve immediately.
