Lemon Pepper Chicken

Ingredients

The chicken

  • 2 pieces chicken breasts

The seasoning

  • 1 Tbsp all-purpose flour
  • 1 tsp dried Italian seasoning
  • 1 tsp coarse ground black pepper
  • ¾ tsp salt
  • ½ tsp garlic powder
  • tsp sugar (optional)

The cooking fats

  • 3 Tbsp unsalted butter
  • 1 Tbsp olive oil

The lemon

  • Tbsp fresh lemon juice
  • ½ tsp lemon zest

The garnish

  • 1 Tbsp minced fresh parsley

Instructions

  1. Whisk together flour, Italian seasoning, pepper, salt, garlic powder, and sugar in a bowl.
  2. Sprinkle and press the mixture over both sides of the chicken.
  3. Melt 1 Tbsp of butter with olive oil in a skillet over medium-high heat.
  4. Add chicken to the skillet and cook until golden brown on the bottom, about 5 minutes.
  5. Flip the chicken and cook until done, reaching an internal temperature of 165°F, about 5 minutes more.
  6. Near the end of cooking, melt the remaining 2 Tbsp of butter with the chicken.
  7. Remove from heat and add lemon juice and zest to the skillet, coating the chicken in the mixture.
  8. Garnish with parsley and serve warm.
