Ingredients

The chicken

  • 2 pieces boneless skinless chicken breasts

The coating

  • 2 Tbsp all-purpose flour
  • 1 Tbsp lemon pepper seasoning

The cooking

  • 1 Tbsp cooking oil
  • 1 clove garlic, minced
  • ½ cup chicken broth
  • 1 Tbsp butter
  • 1 tsp lemon juice
  • 1 Tbsp chopped fresh parsley (optional)
  • tsp freshly cracked black pepper

Instructions

  1. Fillet the chicken breasts into thinner pieces.
  2. Mix the flour and lemon pepper seasoning, then coat the chicken pieces with the mixture.
  3. Heat oil in a skillet over medium heat and cook the chicken until golden brown, about 5 minutes per side.
  4. Remove the chicken and keep it warm.
  5. Add butter and garlic to the skillet and sauté for about one minute.
  6. Pour in the chicken broth and whisk to dissolve browned bits from the skillet, then add lemon juice and simmer for 3-5 minutes.
  7. Return the chicken to the skillet and spoon the sauce over it to heat through.
  8. Season with freshly cracked pepper and parsley if desired, then serve.
